WHOLESALE BEEF

When someone mentions Wholesale Beef - they are referencing a purchase made on a bulk amount. This can be a whole beef, half beef, or quarter beef. More specifically - ordering 1/2 (for example) of an animal for consumption.

Why?

Folks order wholesale beef for a number of reasons. It is price effective, it is efficient, and you are aware of where your food is coming from. There is transparency in the upbringing of your animal, therefor buyers are confident in what they are purchasing and ultimately consuming.

Amount

We slaughter our animals right around 1,300 pounds. This will net you around 450-525 pounds of take-home, edible material on a whole beef (225-260 on a half). These cuts include any type of beef you've ever had: steaks, roasts, grind, bone-ins, bone-outs, short ribs, liver, brisket. Anything you want - we can cut out.

Weights

There are 3 weights to know. Live Weight, Hang Weight, and Take-Home Weight. Understanding what they are is important to avoid confusion.

Live Weight: weight of the animal "on the hoof", or as it walks.

Hang Weight: weight of the carcass of the animal after removal of hooves, head, hide, and internals. Typically around 60% of Live Weight. This is what your price is based on.

Take-Home Weight: weight of the edible product you receive. Varies based on cut selection (i.e. bone-in steaks weight more than equally cut bone-out steaks). Typically around 60% of Hang Weight, or 35%-40% of Live Weight.

Each is important and plays a role in the beef production procedure. Obviously - these are not hard-set numbers and are subject to some variability.

Cuts

When purchasing wholesale - you have the ability to get any cut of meat you want. A beef animal is made up of two halves - meaning that every cut of beef comes off 1/2 of the animal (think of a beef animal as a "2-pack", or mirror image). So, if you order a half-beef, you can meet any need or want you desire.

Freezer Space

Rule of thumb is 1 cubic foot for every 40# of packaged meat. If a 1,300 pound animal returns 500 pounds of take-home product, you would need to anticipate 12.5 cubic feet of freezer space to store meat. Using these numbers - a Half Beef would require 6.25 cubic feet.
